Max Allen's Wine & Food Dinner

Join one of Australia’s leading wine experts for a mouth watering wine and food masterclass.

Wine writer Max Allen will lead you on a journey of discovery that will show how you taste wine for maximum enjoyment and explore local and global wine regions.
Discover flavours in wine you never knew existed as Max encourages, explains and demystifies the world of wine and unravels the secrets of matching wine and food.

The masterclass is held in a restaurant in the Melbourne CBD and is divided into four courses – each with its own beautifully matched dishes.

Part 1 - The flavours of the grapes
Learn about white wine varieties such as semillon and sauvignon blanc from Australia and New Zealand. See how they are a perfect match with stunning seafood dishes such as cured anchovy toasts and a beautifully marinated salmon. Max will then lead guests into up and coming aromatic white wines such as pinot gris and pinot grigio - these will be served with a warm calamari salad.

Part 2 - The flavours of the land
This next bracket is focused on Australia's most famous red wine - shiraz. Learn how shiraz grapes grown just a few kilometers apart can create very different tasting wines.
The classic pepper and spice flavours of shiraz is perfectly partnered with the classic Roman pasta dish called Cacio e Pepe – fresh tagliatelle with pepper and pecorino.

Part 3 - Getting better with age
The influence of winemaking and cellaring on wines is really fascinating. In this section Max will serve a young vintage and an older vintage of the same wine in order to show this in action.
The richness of these beautiful wines really becomes apparent when matched with slow-cooked oxtail with polenta.

Part 4 - Sweet and sticky
Finish with a couple of sweet and fortified wines. First up is a delicate zibibbo matched with a luscious white chocolate mousse with lemon, lime and orange.
Then it's time to indulge in a dark, treacly muscat - and the perfect dessert - it has to be a warm chocolate tortino soufflé.

The event will conclude with a wine tasting challenge that give you an opportunity to put your new-found knowledge to the test!

Note - This class is for group bookings - numbers and costs for each booking are listed below.

Costs
Max Allen’s Wine Masterclass costs $2960 00 – this covers up to 16 guests.
Extra guests are $185.00 PP.
The class runs for around 3 hours.
All classes require pre-payment to secure the event.

He is a regular presenter and judge at wine tastings around the world and a fervent supporter of biodynamic wines and sustainable wine production. Max’s books include the best-selling Red and White: Wine Made Simple and The Future Makers: Australian Wines for the 21st Century (published Oct 2010). He has won numerous awards for his writing, including the prestigious Andre Simon Memorial Award in 1999 and Wine Communicator of the Year Trophy, awarded by the International Wine and Spirit Competition in London in 2003.
